Scallop Shrimp Kabobs
Ingredients:
1 8 oz. can pineapple chunks
2 Tbs. lemon juice
1/2 c. soy sauce
2 lbs. large fresh shrimp, peeled and deveined
1/2 lb. bacon
1 green pepper, cut into 1" pieces

Directions:
Drain pineapple, reserving juice. Combine pineapple juice, lemon juice, soy sauce, and shrimp. Cover tightly and marinate at least 1 hour. Cut bacon slices in half; cook until limp but not crisp. Drain and set aside. Drain shrimp; alternate pineapple chunks. shrimp, bacon, and green pepper on skewers. Broil 3 minutes or until shrimp are done. makes 1 dozen appetizers or 4 main dish servings.
