Shrimp-Stuffed Eggs
Ingredients:
8 hard-cooked eggs, shelled
1/2 c. mayonnaise
1 Tbs. chopped fresh dill
1/4 tsp. salt
1 jar (about 4 oz.) shrimp, drained
8 hard-cooked eggs, shelled
1/2 c. mayonnaise
1 Tbs. chopped fresh dill
1/4 tsp. salt
1 jar (about 4 oz.) shrimp, drained
Directions:
Halve eggs lengthwise; scoop out yolks. Mash yolks thoroughly with a fork. Beat in mayonnaise, dill and salt. Reserve 16 whole shrimp. Chop remaining shrimp finely. Fold into yolk mixture. Refill whites, garnish with reserved shrimp and dill.
Makes 8 Servings
