Veal Parmesan
Ingredients:
1 lb. veal leg round steak
1/2 c. chopped onion
1 clove garlic, minced
1/4 c. chopped green pepper
2 tsp. olive oil
2 Tbs. freshly grated Parmesan cheese
1 c. tomato sauce
1 Tbs. dry red or white wine
1/2 tsp. Italian seasoning
2 oz. freshly shredded part-skim mozzarella cheese
1 lb. veal leg round steak

1/4 c. chopped green pepper

2 Tbs. freshly grated Parmesan cheese
1 c. tomato sauce
1 Tbs. dry red or white wine
1/2 tsp. Italian seasoning
2 oz. freshly shredded part-skim mozzarella cheese
Directions:
Cut veal into 4 pieces; pound to 1/4" thickness. In a large skillet, cook onion, garlic and green pepper in oil until tender. Push to one side of skillet; add veal and brown on both sides. Combine Parmesan cheese, tomato sauce, wine and seasoning. Pour over meat and cover. Cook over low heat for 20 to 25 minutes, or until meat is tender. Sprinkle mozzarella cheese over meat. Cover for 1 to 2 minutes more to melt the cheese.
Makes 4 Servings
