Wiener Schnitzel
Ingredients:
1 1/2 lbs. veal round steaks or cutlets, 1/2" thick
1/4 c. flour
1 beaten egg
1 Tbs. milk
1 c. fine dry bread crumbs
1/4 c. oil
Lemon wedges

Directions:
Cut meat into 4 pieces; pound 1/4 to 1/8" thick. Cut small slits around edges to prevent curling. Coat meat with flour seasoned with 1 tsp. salt and 1/4 tsp. pepper. Combine egg and milk. Dip floured meat in egg mixture, then in bread crumbs. Cook meat in hot oil for 2 to 3 minutes on each side, or till tender. Serve with lemon.
