Blueberry Buckle
Ingredients:
1/2 c. shortening
3/4 c. sugar
1 egg
2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
2 c. fresh blueberries
1/2 c. sugar
1/2 c. flour
1/2 tsp. cinnamon
1/4 c. butter
1/2 c. shortening
3/4 c. sugar
1 egg
2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
2 c. fresh blueberries
1/2 c. sugar
1/2 c. flour
1/2 tsp. cinnamon
1/4 c. butter
Directions:
Beat shortening and 3/4 c. sugar at medium speed until blended. Add egg, and beat until fluffy. Combine 2 c. flour, baking powder and salt; add flour mixture to shortening mixture alternately with milk, beginning and ending with flour mixture. Spread batter in a greased 11x7x1 1/2" pan. Sprinkle blueberries on top of batter. Mix next four ingredients and sprinkle on top of blueberries. Bake at 350 until done.
