Chicken and Dumplings
Ingredients:
Cook and debone the meat of 2 1/2 lb. chicken. Put this meat with the broth in a large kettle with a tight fitting lid.
DUMPLINGS:
1 egg
2 Tbs. milk
1/2 tsp. salt
3 tsp. baking powder

Directions:
Beat the dumpling ingredients with enough flour to make a good stiff dough. Drop it by spoonfuls into the boiling broth. cook the dumplings, covered for 5-8 minutes. It is important that the lid not be removed during this time. Remove kettle from the stove, take the lid off and serve the chicken and dumplings at once. The dumplings should be light and fluffy.
