Fried Eggplant
Ingredients:
2 medium-sized rggplant
2 eggs, beaten
1/4 c. milk added to eggs
1 c. seasoned cracker crumbs
Shortening
Salt and pepper to taste

Directions:
Pare and slice the eggplant in 1/2" slices. Salt and let stand a few minutes. Dip each slice in the egg mixture and then into cracker crumbs. Place in skillet to which the fat has been heated to a high temperature. Continue frying until all are done. It takes about 10 minutes to fry them through.
