Fried Fillets
Ingredients:
1 c. flour
1/2 to 3/4 tsp. salt
1/4 tsp. pepper
1 1/2 c. finely chopped pecans
1 1/2 c. soft bread crumbs
4 flounder fillets
2 eggs, beaten
3 Tbs. butter, melted
3 Tbs. vegetable oil

Directions:
Combine flour, salt and pepper in a shallow dish; stir well, and set aside. Combine pecans and bread crumbs in a shallow dish; stir well, set aside. Dredge fillets in flour mixture; dip in beaten egg, and coat with pecan mixture. Fry fillets in hot butter and vegetable oil in a large skillet over medium heat 3 to 4 minutes on each side or until fish flakes easily when tested with a fork. Drain well.
