Lemon Parsley Potatoes


3 lbs. small red potatoes, quartered
1/2 c. butter, melted
3 Tbs. lemon juice
3 Tbs. minced fresh parsley


Cook potatoes in boiling water until tender, about 15 minutes; drain. Combine butter, lemon juice and parsley; pour over the potatoes and stir gently to coat.

Makes 10 -12Servings
