Roasted Corn
Ingredients:
2 c. corn, freshly cut from cobs
1 Tbs. brown sugar
1 tsp. cinnamon
1/8 tsp. Kosher salt
1/8 tsp. freshly ground black pepper
2 c. corn, freshly cut from cobs
1 Tbs. brown sugar
1 tsp. cinnamon
1/8 tsp. Kosher salt
1/8 tsp. freshly ground black pepper
Directions:
Slice corn from cobs in a small baking pan. Set corn aside. In a small bowl, combine brown sugar, cinnamon,salt and pepper and stir to blend. Sprinkle the sugar mixture over corn and toss to mix. Roast in preheated 350 degree oven 10 to 15 minutes. The corn may be served warm from the oven or pureed in a food processor to accompany other vegetables.
