Shoofly Cake
Ingredients:
2 1/2 c. flour
3/4 c.sugar
1tsp. baking soda
1/2 tsp. salt
1/2 c. shortening
1 c. hot water
1/2 c. light molasses
Whipped cream or ice cream (optional)

Directions:
Stir together flour, sugar,soda and salt. Cut in shortening until mixture resembles fine crumbs. Remove 1/2 c. crumbs.
Stir together hot water and molasses; add to crumb mixture in bowl. Stir just until blended. Turn into greased 9x1/2" round cake pan. Sprinkle reserved crumbs over top. Bake 350 for 25 to 30 min. or till done.
